I also remember having an appetizer at DC&amp;#39;s world class French restaurant many years ago, a dish with peeled seeded grapes, with lump Blue Crab meat and the lightest cream sauce.  I cannot duplicate the sauce, and cannot peel another grape trying!! But, after weeks of waiting for them to ripen into big, green, gorgeously sweet table grapes, a friend informed me that they would remain little yellowy-pink marbles ... for they were champagne grapes. Which, of course, I then found out did not even make champagne. &lt;br /&gt;&lt;br /&gt;Ironically, the only recipe I found on the Internet using champagne grapes was Martha Stewart&amp;#39;s. I commend you on your bravery. My response was, &amp;quot;Gack.&amp;quot; &lt;br /&gt;&lt;br /&gt;Summer&amp;#39;s over and my grapes are gone. If they decide to reappear next year, I&amp;#39;ll try the galette on your recommendation. Similar aversion to the recipe--with a twist of these grapes were Jolly Rancher sweet, why are we adding more sugar? (Also, the time to seed the grapes felt ridiculous.)
