I've been hankering for the taste of cilantro the past few days, but I want to try something new. So why not reach out the the food blogger community and see what we can collectively pool together. Anyone out there have a really good recipe that showcases cilantro really well that you personally love to cook and serve?
I think Tom Yum (chicken or prawn, whichever you prefer) soup does a pretty good job of making full use of the fab flavour of cilantro. Let's see if I can dig out my recipe....
ReplyDeleteWhat about cilantro-mint chutney? Whizz up equal parts of cilantro and mint, a knob of ginger, a clove or two of garlic, a chile of your choosing and some coconut milk in a food processor. Serve with whatever.
ReplyDeleteI adore cilantro!!! In the summer I make fresh salsa with gobs and gobs of cilantro but that wouldn't be so great right now 'cause the wintery tomatoes don't lend themselves to it so much. But lemme think...
ReplyDeletemexican manicotti...
ReplyDeleteMake savory crepes, fill with a ricotta/ cotija/cilantro combo and top with a cilantro and chipotle spiced tomato (or bolognese) sauce
I grew up in Mexico - we use tons of cilantro in Guacamole. Just make sure to marinate it separately in lime juice for a few minutes before putting it into the avocado mix :)
ReplyDeleteThanks for the suggestions everyone! I just picked up a bunch! I'm going to make som guac tonight, and Mer's chutney for lunch! Yummy!
ReplyDeleteHere's a great and unusual use of cilantro: Asparagus & Cilantro soup.
