Amaretti & Prunes (PLUS: A Cookbook Giveaway!)

-A colorful and sweet risotto with a mellow wisp of parmesan and butter, and announced with a trumpeting blare of prunes and wine.-

"Okay, well right off the bat you don't want an Amarone. That'll set you back $70 on the low end and if you want to stay on budget we should find one wine for both dishes." The wine guy said this without looking at me as he searched through the racks of Italian labels in what seemed to be a futile attempt to help me. My wine knowledge isn't what one might even call mediocre, I have more know how in how to install a light fixture than knowing a rosey wine from a rosey nose. Thus, the task of meeting my seemingly impossible needs fell to him.

I was hell bent on making two dishes from my Pasta Sfoglia book, one being a gnocchi dish using the sweet potato gnocchi I made last weekend and the other being a risotto. Both dishes required prunes and amaretti, a dry Italian almond cookie. I figured this would be a great chance to try two different dishes.

However, each one also asked for a different, slightly expensive wine, one that asked for Amarone and the other a Marsala. After a bit of searching my wine guy was able to find something that kind of balanced the two though from what I understand I was basically asking for, "apples and oranges in one bottle."

-It was this one. It's a good thing you're reading this because I'm pretty sure I pronounce it so badly you'd go spontaneously deaf.-

With wine in hand I began my risotto experiment. I had never made risotto before and assumed it was just like making rice pudding. Furthermore, I had only ever tried onceone my life so I had no idea what a finished risotto really looked like. Luckily, the cookbook had pretty clear directions so as I sat and stirred and shook and mixed while I listened to Anthony Hopkins play the role of Titus on my crappy old television. Shakespeare and the smell of risotto cooking; I can't endorse this combo enough.

Soon it was time to serve...

"You'll have to pardon me if the risotto is like glue. Eat it anyways and make me happy," I slid the bowls of risotto over to my guests. The risotto was striking in its hues of purple; lavender shaded rice with pitch-burgundy sauce which offset the tan crumbles of amartetti.

All my testers then looked at the food in front of them. Purple food - strikingly purple food - was not quite common for either of them. They lifted their forks, took a bite, mulled it over a bit, and then smiled and dove in for more. They weren't even faking. Go me.

The risotto was delicious, especially the sauce. (My God, the sauce!) When we had the leftover risotto again for dinner I made another batch of it and loosely swirled it in with the rice and crumbled more cookies over the top. My guests and I were in agreement that this was a better result though whether it was due to our collective sweet tooth or the fact that my risotto skills are negligible is undetermined (probably a little column A and a little column B).

The gnocchi dish was equally tasty as differing layers of sweet flavors really helped establish a choral counterpoint to the still savory gnocchi. However, it is my opinion that sweet potato gnocchi will taste perfect no matter what you do to them.

Overall, between all the gnocchi and risotto I'm totally digging the prune-amaretti combo and this cookbook (and I have yet to even try the pasta dishes). Risotto with Red Wine, Prunes, and Amaretti
Adapted from Pasta Sfoglia
Serve 4-6


2 tablespoons of oil (olive, safflower, or grape seed)
1 cup of coarsely chopped onions
2 cups of carnaroli rice
1 1/2 cups of red wine
6 cups of water
1 teaspoon of salt
ground pepper
5 tablespoons of butter
1/2 cup of grated Parmesan
2 cups chopped prunes
1/2 cup of crushed amaretti cookies

1. Add the oil and onions to a 3 quart saucepan over medium heat. Cook until translucent, about 3-4 minutes.

2. Add the rice and toast for 1-2 minutes, stirring every few seconds to avoid sticking and burning. Add 1/2 cup of the wine and cook until evaporated.

3. Begin to add the water, 2 cups at a time stirring often in order to release the starch. Continue to shake pan. When a wooden spoon dragged through the rice reveals a pathway add the next 2 cups. Add salt and pepper.

4. During the addition of the remaining 2 cups of water add 3 tablespoons of the butter and the Parmesan.

5. Begin the topping: Add the prunes, remaining wine, and remaining butter and toss into a skillet over high heat. Reduce to a syrup. About 8-10 minutes (6 on my freakish electric coil).

6. Place risotto in a bowl and top with the prune wine mixture. Garnish with amaretti cookies. Serve.

Note: On serving I highly suggest loosely mixing it all together. Way better in my opinion.

    I will tell you anyway... my favorite pasta is a dish I often had while living in Italy, it was a dish of fresh Pici pasta with a long simmered wild boar ragu... makes my mouth water just thinking about it....

  10. I think my favorite pasta changes seasonally. During the summer I love something really fresh tasting, like spaghetti with fresh tomato, garlic, and basil. When it is colder I like something richer, like fettuccine alfredo or gnocchi.

  12. I was never a fan of gnocchi until went to Argentina. Surprisingly, gnocchi is very prevalent there, and it was amazing. I'm now a convert, and can easily say that gnocchi is my favorite pasta dish. Sweet potato gnocchi sounds delicious!

  16. If you love mixed flavours next time you can cook some plums together with onion, then pick them out from the pan and use them for the sauce, adding it to risotto two minutes before serving.
    I'm writing from Italy and I can tell you my favourite pasta is "pizzoccheri" (buckweat noodles boiled with shredded cabbage and diced potatoes and served with garlic and sage butter and melted mountain cheese), even if I know the book will never be mine...

  21. Hmm...tough decision. Favorite pasta that comes to mind is papardelle because it reminds me of the egg noodles my mom put into chicken soup and makes anything you serve it with a comfort food. Favorite pasta dish (because I'm not sure which you were asking) is probably aglio e olio (garlic, oil, crushed red pepper and anchovies) with spinach mixed in, because it's delicious, easy, fast and inexpensive to boot. And thanks for the giveaway!

  23. I have to pick a favorite pasta? Seriously? Ack! I love homemade pasta, and I love making it, with a simple mix of vegetables or a fresh tomato sauce, or sauteed wild mushrooms and white wine. I also love ravioli filled with squash, served with a sage and brown butter sauce. And I love what my grandmother calls "macaroni," which is really ziti with her homemade red sauce, and is what she serves EVERY time we go visit, for that first meal. It is awesome.

    So, I guess the point is I have a lot of favorites.

  30. FRESH! In college I worked at a gourmet pasta shop and so I love fresh pasta. I learned such great recipes there like walnut sauce, avocado tortellini salad, and chocolate pasta. I definitely ate well taking day olds and leftovers home. Missing it.

  42. This looks delicious and I would never think to drink a red wine with risotto. Just goes to show how little I know about wine. Anywhoo...impossible to pick just one favorite past but if I MUST (sigh.....), then it would likely be orechiette w/peas, prosciutto and a little cream.

  44. I had to think about this a bunch. I just recently taught myself, with some help from YouTube, to make Torteloni. They came out perfect and I served them "in brodo" - in a combination chicken and veal broth. Stuffed with spinach and ricotta with a scrape of nutmeg and then topped with fresh grated parmigiano, it was a great meal on a cool autuno evening.

  46. Bowties, with lemon basil pesto and grilled chicken. We house sat for friends this summer and they a copious amounts of lemon basil in their garden, so I made several jars of pesto. The lemon basil has the most amazing fragrance!

  50. I just inherited my grandmother's vintage pasta roller TODAY, so this contest comes at the most perfect time. We used to make fresh noodles that we would cook in homemade chicken broth. I miss this meal and miss my grandmother. its like chicken and dumpling, but with noodles instead of dumplings.

    Also-I love tortellini in a fresh pesto with sun dried tomatoes. Less filling than a ravioli, and in a fun shape that seems to grab more sauce. YUM!

    I'm not a huge pasta fan, but I could die happy if my last meal were authentic spaghetti carbonara. On the other hand, my half-Italian husband would eat pasta every day of his life and be thrilled. His favorite is linguine with any kind of tomato sauce.

    I like cool-shaped pastas, the ones with names I can't pronounce. And I like linguine and cheese-filled pastas too. I guess the only pastas I don't like are the thin kinds like spaghetti and angel hair.

    Nonetheless, nothing to me beats the simplicity of a good angel-hair pasta and marinara sauce.

    You're forced to eat it slowly as it is slippery in all its wonder. And the texture of the tiny noodles in the mouth is like sex in the mouth (but, you know, tastes better)

    I gave lots of thought to the pasta question, and I'm going to go with ruote (wagon wheels). I love them in a chunky tomato and veggie sauce, but they're also great because they do well in salads and soups. Versatile and delicious!

  57. I'm a South Texas girl...born and raised...but I went to college in upstate NY. (I know!) In San Antonio, where I'm from, Italian food is defined as crappy pizza or frozen lasagna...so I thought I hated it. I. WAS. WRONG. I *love* the good stuff...my fav? Mussels over linguine with a delicate white wine sauce...OMG is that mess good!

  68. My favorite pasta is my family recipe for lasagna! There's nothing like the sweet and tangy meat sauce combined with the light, gooey cheese and the just right texture of slightly al dente noodles. Also, lasagnas freeze really well, making it perfect for a "come home and throw it in the oven and don't think about it" kind of day.

    My secret? Bison meat (it's lean) in the sauce, and a mix of ricotta, cottage cheese, and mozzarella for the cheese layer.

  71. OMG, picking a favorite pasta is like picking a favorite dark chocolate dessert. Maybe harder. Any filled pasta holds a special place in my heart, so ravioli is probably pretty close to my favorite. Good gnocchi is to die for too, and I really want to try the sweet potato version!

  78. Love this recipe! I made vermicelli cooked in red wine with toasted walnuts, parmesan, and parsley a few weeks ago (killer!), but this looks great, too. Prunes are WAY underrated, in my opinion.

    My favorite pasta is 100% simple: take a high quality pasta, any shape (I like spiral pasta, just because it's pretty), and toss it with French butter, salt, and grated parmesan. You taste the pasta, but the butter, cheese and salt are the perfect compliments.

  85. Mmmmmm pasta imported from Naples, Italy. It doesn't really matter what shape it is, it's the location of origin that makes the most divine al dente. That said, my favorite pasta name is orichette because it's just so darn fun to say!

  86. My favorite pasta is fettuccine. I like how bigger it is than spaghetti, and to me it is more versatile, because of it's width so there are more things you can do with it. I like to use in in place of lasagna when making "lasagna"

Lately, they get topped by whatever veggies happen to be languishing in my crisper drawer--roasted or sauteed with olive oil, balsamic vinegar, and fresh herbs. If I'm feeling decadent, I throw together a sweet Marsala sauce with a touch of cream. Yum.

  90. Long time reader, first time commenter. My world of pasta knowledge is quite limited, despite my (1/4) Italian heritage. I am a fan of most pasta's I've tried, and love anything with garlic. I like anything from macaroni and cheese to pesto cavatappi, but I think my "favorite" award would have to go to my mom's lasagna. Can't go wrong with homemade.

  94. My favorite pasta is called Pappardelle Il Forno from a restaurant in CT called Via Sforza. This was our favorite Italian restaurant where we lived and we were moving to California, so I asked the chef for the recipe. We were regulars ,so they gladly shared it. We love making it (and eating it) and reminiscing.

  97. The very first meal my boyfriend ever cooked for me was a pasta dish he called Pasta Carbonara. I knew immediately this was not traditional carbonara but was delicious anyway with capers, garlic, oil packed sun-dried tomatoes, & onion sauteed w/ crisp pancetta & quickly tossed w/ spaghetti. 4 years later, it's still my favorite pasta dish!

  98. For nostalgic reasons, my favorite pasta would have to be homemade pesto over fettuccini. It is the first past I learned how to make when I was 9. Knowing this simple sauce recipe (by heart) has served me well and seems to impress those who are kitchen illiterate.

    Favorite pasta was probably my only home-made success. Some friends over in the kitchen, sipping wine, helping roll pasta. We were having too much fun to be scared of the pasta machine - I think that's why it was successful!

    My favorite pasta is actually soba noodles. While not the traditional Italian variety of pasta, they are damn tasty, especially cooked up with some chard and garlic and Parmesan.

  104. My favorite kind of pasta is really not a "kind" but rather a "meal" - my mom's spaghetti with meatballs. Sometimes she would make it with spaghetti, sometimes with rigatoni, but always with her amazing homemade sauce. I moved out on my own a couple decades ago, and mom lives in another state, so I don't get to see her very often. Man, I miss her... and her spaghetti. ;)

  108. My favorite pasta is whole-wheat linguine with fresh tomatoes, basil, and red pepper flakes. A simple combo, but I really enjoy it!
