Coconut Cream Ice Cream

I wanted one more run on the ice cream maker before it became too chilly. Luckily, Chocolate and Zucchini had a simple recipe with ingredients I had in my pantry. It's very tasty sweet. I upped the amount of coconut by about a cup and used some dark rum and vanilla sugar. It's quite a treat.

  1. Coconut ice cream is my favorite. another ice cream that I want to learn to make at home is ginger ice cream. I had that in a Thai restaurant in Lake Tahoe.

  5. That looks fantastic! One of my favorite summer treats are those Dreyers Whole Fruit Coconut Bars - but this takes it to a whole new level.

    Hey, have you heard anything about the Kitchen Aid mixer ice cream attachment? I wonder if that's worth trying out!

  6. Yum, yum, yum. Coconut ice cream is best served (in my opinion) over slices of fresh pineapple that were marinated in brown sugar, rum and cinnamon and then tossed on the grill.
