Garrett's Green Curry

Yep, an actual non-cupcake recipe. Yeah, they're rare on here, but when I do share one, it's because I love it. We make this curry often because it's quick, simple, and makes for a great lunch the next day. Serve it over rice and you're set. Lime, basil, and cilantro are the core of this curry, so go wild and go crazy. It's a simple meal that's perfect year round.

Garrett's Green Curry
Serves 4

What You'll Need...
2 cans of coconut milk
2 tablespoons of green curry paste
2/3 cup of chicken stock/broth
2 tablespoons of fish sauce
3 tablespoons of brown sugar or palm sugar
juice and zest of one lime
some cilantro all chopped up
some basil all chopped up
juice and zest of two limes
various veggies (I like bok choi, green onions, and baby bella mushrooms)
tofu or chicken, chopped into cubes

What You'll Do...
1) Simmer the coconut milk and curry paste for about 5 minutes.
2) Add everything else and simmer for 10-15 minutes. Serve over rice. Garish with some fresh lime and cilantro.
There isn't a recipe per se', this is just how I go about it each time. Play with the flavors and amount of basil, cilantro, etc. as you like it.
